TERMINOLOGIES AND MEANINGS:
Embark on a journey to culinary excellence!

Argentinian Grill, Parilla, Santa Maria & Gaucho:
Known as a Parrilla Grill, Gaucho Grill, or even a Santa Maria Grill in California,
this type of grill has deep roots in Argentina and South America.
It’s purpose-built for cooking large cuts of meat, particularly beef, over an open flame.
Parrilla is the Spanish word for the metal grate or framework used to cook food over a fire.
In South African English, parrilla translates to grill or braai,
referring to both the cooking apparatus and the act of grilling(braaiing) itself.
A Santa Maria Grill features an iron grid that is lifted and lowered via a hand wheel.
Designed more for a wood burning barbecue than charcoal and is a
culinary tradition that originated in the nineteenth century on the Central Coast of California by local ranchers.
It is said that at the end of a long workday ranchers would dig large earthen pits to cook meals for their help.
The open design of the Santa Maria also creates a captivating display of flames and smoke, adding to the overall grilling experience.
A gaucho or gaúcho is a skilled horseman, reputed to be brave and unruly.
The figure of the gaucho is a folk symbol of Argentina, Paraguay, Uruguay, …
Sometimes referred to as a Santa Maria Grill, an Argentinian Style Grill, or increasingly a Gaucho Grill (literally Cowboy Grill),
these units have a pan or grate for charcoal in the bottom, and a movable cooking surface that can be
dropped down for intense, high temperature grilling, or lifted up for a smokier, low …

(Santa Maria) Fire Pit:

The defining feature of a fire pit is that it is designed to contain fire and prevent it from spreading.
A fire pit can vary from a pit dug in the ground to an elaborate structure of stone, brick, and metal.
A KarooBraai™ fire pit in the context of Argentine Braais, refers to a housing manufactured with the aim
to define a specific total braai area, which will be clad in fire brick and may /may not have a front access door added.

Brasero:

A metal container used for burning fuel for heat.
Often portable, used to hold burning coals or wood for heating – used to give warmth or to cook on.
A metal receptacle for holding live coals. A fire box or ember maker

Asado / Asador Style (Cooking) / Asada:
Asador style” refers to a method of cooking, primarily grilling, that is traditional in Argentina and other South American countries.
It typically involves cooking meat, often a whole animal or large cuts, on a metal frame or spit (an “asado(r)”) over an open fire.
This technique emphasizes slow cooking, wood fire, and a smoky flavor imparted by the fire and wood.
Asado is the conventional and minimalistic form of roasting meat, typically on a skewered metal structure known as an ‘asador‘.
The asador is placed very near a slow-burning fire, with the fire and smoke imparting a unique flavor to the meat.
Carne asada
, which in English means “grilled meat,” is beef. For this Mexican dish, one-inch-thick
steaks are marinated in lime juice and seasonings, grilled, and then cut into thin strips.

Plancha:
In Spain the word plancha is used to refer to any flat heated surface.
An option that succeeds in searing protein and delicate foods like seafood and is also great for cooking breakfast items like eggs and pancake.

Free-floating design EAZYDuty RoundBar Grid:
KarooBraai™ grids are equally popular and a timeless, classic braai component.
Ensuring consistent heat distribution, it is manufactured from 8mm thick stainless steel round bars – free-floating in a 25mm square tubing frame.
Free-floating prevents round bars and frame to fight the battle of unequal expansion and retraction during a braai.

Parilla V-Grid:
A KarooBraai™ Argentine V-grid is meticulously manufactured to perfection from 3mm thick food grade stainless steel V-bars,
sloped at an angle to guide excess fats away from protein.  The only grid preventing flare-ups while still ensuring searing capabilities.

Parilla Drip Tray:
A KarooBraai™ Parilla removable drip tray refers to a tray positioned in front of the V-Grid (or plancha) in order to catch excess fluids and fats.

Ember Grid /Fire Grid /Wood Grate:
A KarooBraai™ ember grid is available in variety of models – all ventilating the fire from below – as follows:
1.  Our popular basic ember grids are manufactured from 10mm thick grade 304 stainless steel – approx 60mm clearance below
2.  Larger ember grids (expanded metal type) are offered in 3,2mm thick stainless steel with a slightly large clearance below.
3. Other ember grids /grates are designed to suit both braais and fireplaces and offer flexibility in aesthetic appeal.
KarooBraai™ Fire Starter Cradles (grates) made from 4.5mm thick grade 3CR12 stainless steel are suitable in some instances
to prepare your embers – large aeration cutouts allow air to be drawn into the base, front and rear of the grate.
(It is important to consider fuel type when opting for an ember grid as wood fires burn differently to charcoal and also to briquettes)
